Wild & Parkland Venison Pencil Fillet. This splendid cut is much sought-after as there are only two of these sweet little fillets per carcass. Served in Michelin-starred restaurants as a delicacy, they are the most lean and tender cut of Venison available. Pencil fillets are really quite exquisite and best enjoyed pan-seared with juniper berries and fresh thyme, blueberries, garlic and red wine. Venison offers excellent health benefits in that it is very low in cholesterol, high in protein and naturally rich in flavour. All produce is locally harvested and sourced by Curtis Pitts, who prides himself on only selling the finest game meat, distributed on a national level. The seasonality of venison means that it is available from the start of August to the end of April.
