Our all new Wild Rack of Venison is taken from one of the best primal cuts on our wild carcass, the saddle. The saddle it split in two, parting the two loins still on the bone. The ribs are then trimmed back and trim meat removed leaving the very best centrepiece joint of the table. All racks are sold with 6-8 ribs. Suitable for feeding 4-6 people. Venison offers excellent health benefits in that it is very low in cholesterol, high in protein and naturally rich in flavour. All produce is locally harvested and sourced by Curtis Pitts, who prides himself on only selling the finest game meat, distributed on a national level. The seasonality of venison means that it is available from the start of August to the end of April.
