Our Wild Rack of Venison is taken from one of the best primal cuts on our wild carcass, the saddle. The saddle it split in two, parting the two loins still on the bone. The ribs are then trimmed back and the trim meat removedm leaving the very best as a centrepiece for the table. All racks are sold with 6-8 ribs. Suitable for feeding 4-6 people.
