Our wild venison carcasses are harvested from the fields and woods and are supplied fully butchered into a range of cuts, including steaks, loins, fillets, boned & rolled haunches, shanks, mince and diced venison.
Please note: the weight selected refers to the carcass dead weight in fur (whole animal) prior to processing. Once skinned, trimmed and fully butchered into boneless cuts, most venison carcasses will yield approximately 50–55% of the original weight.
For example: a 20kg carcass will typically produce around 10–12kg of finished venison.
