Our super limited-edition Handmade Wild Venison Wellington has been crafted exclusively for this Christmas, making it the perfect festive centrepiece.

Tender wild venison loin is wrapped in a rich mushroom duxelles and encased in golden, buttery puff pastry. Every bite combines the deep, distinctive flavour of wild, sustainably sourced venison with the indulgence of a classic Christmas feast.

Prepared and ready to roast, our Wild Venison Wellington makes serving something truly special effortless – whether it’s the main event on Christmas Day or the highlight of your festive entertaining. 

Each Wellington weighs approximately 300g and serves two people generously. Hand-prepared in small batches using artisanal techniques, simply defrost and it’s ready to cook and enjoy at home.

Description

Our Wild Venison Wellington is delivered frozen and must be fully defrosted in the fridge for 12–24 hours before cooking. Once defrosted, preheat your oven to 200°C (180°C fan) / Gas Mark 6. Remove the Wellington from all packaging and place it on a lined baking tray, uncovered.

Cook in the centre of the oven for 25–30 minutes, or until the pastry is crisp and golden. Allow to rest for 5–10 minutes before slicing and serving.

For best results, use a temperature probe – you’re aiming for an internal temperature of 50°C for perfectly cooked, medium-rare venison. Insert the probe through the end of the Wellington rather than the side or base to avoid any juices escaping or pastry splitting. 

As ovens may vary, please use these timings as a guide and ensure the product is piping hot throughout before serving.
