The Shank is a perfect slow roasting mini-joint, taken from below the haunch provides a very tasty option. Form a parcel with foil and parchment paper, place the shank in the middle and add fresh rosemary, garlic, red wine and a couple of bay leaves, season, wrap and cook low and slow in the oven for two hours. Venison offers excellent health benefits in that it is very low in cholesterol, high in protein and naturally rich in flavour. All produce is locally harvested and sourced by Curtis Pitts, who prides himself on only selling the finest game meat, distributed on a national level.
