Wild & Parkland Venison Pencil Fillet. This splendid cut is much sought-after as there are only two of these sweet little fillets per carcass.

Served in Michelin-starred restaurants as a delicacy, they are the most lean and tender cut of Venison available. Pencil fillets are really quite exquisite and best enjoyed pan-seared with juniper berries and fresh thyme, blueberries, garlic and red wine.
